If you haven’t already heard about the ever-so-popular Instant Pot, you’re welcome in advance for this insightful post (hehe). Instant Pot’s are the latest kitchen must-haves and it’s no wonder why as they cut your cooking time in half (or less) and can do numerous things all within one. single. machine. If you’re not running to your local Bed Bath and Beyond/ Target/ Walmart to pick one up now, you’re wrong.
Instant Pots work so well because they can cook elaborate meals in less than an hour by hitting your food with a one-two punch of high pressure and heat. The amount of cooking techniques this baby can handle is astonishing really. It has the ability to slow cook, pressure cook, steam veggies, cook rice to perfection, make yogurt, sauté, brown meat, and more. If this doesn’t impress you, the minimal cleaning required after dinner might. If you’re anything like me, you probably enjoy cooking (sometimes), but you HATE the clean-up part.. this machine literally does all your cooking for you so the cleaning is so manageable.
I have received so many requests to do a post on my favorite Instant Pot recipes lately so I’m excited to finally have a comprehensive list for ya. Keep in mind I do not own any of these recipes (because I’m good but not that good, duh) but I have linked their authors so that you can hopefully find more recipes from these talented folks!

SkinnyTaste’s Easy Salsa Shredded Chicken
This is by far the easiest recipe I have tried so far. We have made this over brown rice, in corn tortillas with a smidge of cheese and avocado, and by itself with a side of veggies. This is the best for nights that you want to toss everything into the pot and be done with it.
Life Made Sweeter’s Instant Pot Beef & Broccoli
Like stir fry but want to go a tad easier with all the sodium & calories? This recipe is for you! Asian food is probably my favorite so it’s no wonder that this recipe is one of my top favorites. It goes so well over a mound of quinoa or even brown rice. Very delish.
40 Apron’s Instant Pot Tortilla- Less Soup
Does this photo not make your mouth water a little bit just looking at it? In the cooler months I’m a sucker for some good, warm soup. It’s pretty difficult to find soups that aren’t loaded with cheese, sodium, preservatives, etc., but this one does a pretty good job. It’s even Whole30 compliant (if you’re into that sort of thing)! If you’re not one that enjoys the low-carb life, heat up some tortillas for tortilla strips or just for dipping!
Rachel Cooks Healthy Instant Pot Chicken Piccata
Welp, you’re looking at my dinner for tomorrow night (not joking). My photo would not be this lovely, because I try and stick to fashion, but I really am making this for dinner tomorrow! I grew up eating a version of this chicken piccata and I LOVE capers so this recipe is a regular contender in our weekly meal planning. Zach loves this with a side of buttery mashed potatoes, and I’m not gonna lie its pretty tasty over some Angel hair pasta… BUT you can totally pair it with some broccoli and its still pretty dang good.
Oh Sweet Basil’s Award Winning Healthy Turkey Instant Pot Chili
I don’t know about you, but on cold fall days nothing quite hits the spot like a heaping bowl of chili. It’s easy to get carried away with calories when it comes to chili, so this turkey chili is a win because it comes in at only 505 calories (which isn’t too bad when you think about it including cheese and sour cream too). Leave these off for a little less cals if thats what you’re looking for. Super yummy.
DetoxInsta’s Chicken Burrito Bowls (Low-carb & Whole30 approved)
Can we talk about the fact that this recipe only has 6 main ingredients and I guarantee you already have at least 5 of them. Once you start adding various toppings obviously the list grows, but SIX INGREDIENTS Y’ALL! Recipes that contain less that 10 are always a hit in my household- quick and easy just the way we like it. This recipe is so great and it can be made frequently due to the fact that you can change up the toppings!

Wholesomelicious’ Instant Pot Zuppa Toscana
So anyone that knows me knows that Zuppa Toscana is my favorite thing from Olive Garden (besides the glorious breadsticks of course), and so when I came across this healthier version of the soup I instantly saved it. I can’t wait to try it out soon on one of these surprisingly cool October nights!
Peas and Carrots’ Instant Pot Strawberry Trail Mix Oatmeal
This looks so sweet and delicious, doesn’t it? I eat oatmeal at least 3x a week and usually its a pretty simple concoction (aka pre-portioned oatmeal packages), but I am SO ready for something like this. Yum yum.
This Pilgrim Life’s Guilt-Free Instant Pot Chocolate Pudding Cake
Alright, I am going to admit something to you all… I really don’t like cake very much. Like for birthdays it was always ice cream or cookie cakes because cake just isn’t really my thing. They’re usually somewhat dry and I usually end up eating just the icing off the top, BUT this one SEEMS very moist and I like that it is more of a pudding-cake more than cake-cake. Does that make sense? Anyway, I cannot wait to try this guilt-free dessert.
